Inspired by Thai coconut curry (but not spicy). Just add a can of coconut milk and water and you have a delicious East meets west rice dish that pairs well with a chicken, fish, prawns, or tofu, tempeh, or pork.
Serves 4. Ready in 22 minutes.
Light coconut milk works great too!
